Sometimes academics can help out in the real world. The Linguist Estates Chardonnay uses the power of fermentation to create the ideal mouth-feel for this California Chardonnay. The winemakers use what is called “partial malolactic fermentation” to ensure that the way the wine feels as it rolls across your tongue is perfect. Too much “malo” can make wines that are very soft feeling, we think that they nailed it with this wine. The fermentation not only affects the mouthfeel, but it also adds the complexity to the wine by imparting hazelnut and dried fruit flavors. Judges love it too. It took home 94 Points and a Platinum medal at the 2018 Critics Challenge International Wine and Spirits Competition, and silver medals at the 2018 Finger Lakes International Wine Competition and at the 2018 San Diego International Wine & Spirits Challenge!
