Moulin de Gassac Pinot Noir Pays d’Oc is a 100% Pinot Noir produced by the Guibert family in Languedoc from vineyards in Cournonterral and Fabrègues, near the Mediterranean Sea. The grapes grow on clay and limestone soils that benefit from cooling sea breezes. Moulin de Gassac Pinot Noir Pays d’Oc 2024 undergoes cold maceration for 3-5 days at low temperature to preserve fruit character, with daily pumping over during fermentation. The wine matures six months in stainless steel tanks to maintain freshness and vibrancy, achieving 13% alcohol at 60 hl/ha yields.
