Description
Sete Alimento is a distinctive natural wine produced by Progetto Sete, a winery located in Lazio, Italy. This project focuses on revitalizing old, abandoned vineyards in the Amaseno River Valley. Alimento is made from 100% Ottonese, a lesser-known local grape variety, and reflects the winery’s dedication to minimal-intervention and sustainable viticulture.
The wine is fermented spontaneously using indigenous yeasts and undergoes around five days of skin contact, giving it an amber hue and subtle texture, making it an orange wine. After fermentation, it is aged for around 10 months in stainless steel tanks on the lees, which adds depth and complexity. The wine is bottled without added sulfites and is both unfined and unfiltered, preserving its natural characteristics.
On the palate, Sete Alimento is known for its mineral freshness, balanced by vibrant acidity. The flavor profile typically includes citrus, spiced apricot, and herbal notes, with a persistent and refreshing finish. This wine is perfect for pairing with a range of dishes, especially Mediterranean cuisine or seafood appetizers.
