With notes of savory blackberry pie, ripe plum, and tobacco, it’s difficult to think of a wine more lush and indulgent than our 2022 Cold Springs Cabernet Sauvignon. Its perfectly-balanced mixture of juicy dark fruits and refreshing acidity brings brightness to the forefront, while oak, black currant, and dried violets help the long-lasting glass linger on a high note. Born in the evergreens, we like to pair this Cabernet Sauvignon with earthy flavors like truffle, mushroom, and even dates.

Hand-harvested in the cool morning hours, we take care to sort our fruit before and after the de-stemmer. After a three-day cold soak, we inoculate the juice with cultured yeast, then monitor temperature and extraction carefully during fermentation. The wine is pressed off the skins and placed in French oak barrels for aging.
