Description
Il Vinco Canajò Vino Rosso is a natural red wine made from 100% Canaiolo Nero grapes. The grapes are sourced from 20+ year-old vines planted in cordone speronato on volcanic sand soils at 380 meters above sea level in the commune of Capodimonte sul Lago di Bolsena. The vineyard has been biodynamic since 2017, using only small amounts of copper and sulfur. After crushing and de-stemming, the grapes undergo spontaneous fermentation in concrete tanks for eight days. The wine is then transferred to stainless steel vats where it rests for three months before release. Minimal SO₂ (26 mg/l) is added only at bottling.
