Description
Bonnet Cotton Piscine Olympique is produced by Pierre Cotton and Marine Bonnet in Beaujolais, France, using certified organic farming practices. This unique rosé blends 40% Gamay, 30% Muscaris, and 30% Souvignier Gris through co-fermentation using the alternating layers method in cement tanks. All three grape varieties undergo whole-cluster maceration together for ten days, followed by spontaneous fermentation with indigenous yeasts. The wine ages eight months in tank and is bottled unfined, unfiltered, with no added sulfites.
