Description
Il Roccolo di Monticelli Cinciallegra is a naturally sparkling white wine from the Veneto region of Italy. This Pét-Nat (pétillant naturel) is crafted from a blend of Garganega and Trebbiano di Soave grapes, sourced from vines planted between the 1960s and 1970s on limestone-rich soils in the hills of Vallata di Mezzane, near Verona and Lake Garda. The vineyards are managed biodynamically, emphasizing biodiversity and minimal intervention. Hand-harvested grapes undergo spontaneous fermentation with indigenous yeasts, followed by a brief skin maceration of 2-3 days. Refermentation occurs in the bottle using frozen must from the same vintage, achieving a delicate effervescence with approximately 2 atmospheres of pressure. The wine is neither filtered nor disgorged, preserving its natural character and resulting in a cheerful, sparkling beverage.
