Description
Mas des Chimères Oeillade is crafted in the Coteaux du Salagou appellation in the Hérault region of Languedoc. The vineyard is characterized by red clay and sandy soils, with some areas enriched by volcanic basalt. This wine is made from 100% Cinsault, an ancient Mediterranean variety that produces light, juicy reds. The vines are organically farmed, and winemaking follows natural practices, including spontaneous fermentation with indigenous yeasts and aging in concrete vats. This approach preserves the freshness and purity of the fruit.
