Description
Ashanta Zazen Zinfandel is crafted from 97-year-old vines planted in 1925 by Italian immigrants on the eastern slopes of the Santa Cruz Mountains, California. These ancient vines, rooted in sandy and pebbly loam soils, benefit from the region’s unique microclimate, which balances coastal influences with mountain elevation. The grapes are hand-harvested and processed with 25% whole clusters, while the remaining fruit is destemmed into open-top fermenters. Fermentation occurs naturally with indigenous yeasts, followed by a two-week maceration period. The wine is basket-pressed and aged for eleven months in neutral French oak barrels. Zazen is produced without any additions, including sulfur, resulting in a pure expression of its terroir.
