Description
Zillamina springs from Valencia’s Alicante DO, crafted by Bodegas Pinoso cooperative through collaboration with Jenny & François importers. This organic white wine blends 51% Airén with 49% Macabeo, grown at 600 meters elevation on limestone-rich soils. The Mediterranean climate delivers 2,500-3,000 hours of annual sunshine, fostering intense aromatics in the hot, dry continental conditions. Following soft crushing and low-temperature maceration, the free-run juice ferments in stainless steel tanks for up to 30 days at controlled temperatures below 16°C. Light vegan-certified fining and filtration with minimal sulfur additions preserve primary fruit aromas, creating an authentic expression of Spanish terroir with sustainable winemaking practices.
