Description
Camillo Donati Il Mio Malvasia is produced in Emilia-Romagna, Italy, using Malvasia di Candia Aromatica grapes. The vineyards are situated on clay and limestone soils, contributing to the wine’s characteristic minerality. Camillo Donati practices biodynamic farming and uses traditional winemaking techniques, including spontaneous fermentation with native yeasts. The wine undergoes two days of skin contact and is fermented in stainless steel before undergoing a second fermentation in the bottle. This results in a Pet-Nat (Pétillant Naturel) sparkling wine with unfiltered natural effervescence and no added sulfur.
This wine bursts with peach, pear, and subtle green apple aromas. On the palate, it is light, refreshing, and vibrant, with fine bubbles and a clean, crisp finish.
