Woodford Reserve 2015 Distillery Series Sweet Mash Redux Bourbon Whiskey is bottled at 90.4 Proof by the Woodford Reserve Distillery in Versailles, Kentucky. Released in Summer 2015 alongside Double Double Oaked as one of the two inaugural expressions in the Distillery Series, this liquid alters the core fermentation stage rather than post-distillation aging. While standard releases use a sour mash process with spent backset to control pH consistency, this expression revives a pre-Prohibition method by implementing a 100% non-soured “sweet mash” using fresh yeast, water, and the standard 72% corn, 18% rye, and 10% malted barley mash bill.
This elevates the fermentation pH to that of fresh water. After triple-distillation in copper pot stills, primary maturation occurs in new charred American oak inside heat-cycled brick warehouses. The resulting chemistry suppresses typical sour undertones to isolate bright spearmint, herbal rye grain, citrus zest, and distinct floral notes.
