Winemaking After the March harvest, clusters are sorted to select plump, healthy grapes. The wine then rests in contact with its crushed grape skins before, during and after fermentation to extract as much color and flavor intensity as possible. Then it’s time for aging. In this case, heavily toasted oak was selected to create tantalizing spice notes. The final wine that enters the bottle offers excellent drinkability now and the ability to age beautifully.
Vintage Local winegrowers were all smiles after Clare Valley’s 2021 vintage. Vines awoke to late winter and early spring rainstorms, which made for a refreshing start to the growing season. Summer was “classically Clare,” filled with blue skies, moderate temperatures and unrushed ripening. These Shiraz vineyards are planted in the valley’s hilly northeast section, surrounded by old gum tree groves. Here, grapes enjoy warm days and cold nights, producing fruit with poised acidity, plush tannins and exceptional regional character.
Pairing Logic This Shiraz delivers depth and darkness. The best pairings will match its flavor intensity and play into its ripe fruit characteristics and spice. Char-grilled and smoked red meats with salty rubs will emphasize the wine’s full body and fruit. Harmonize flavors by topping these with dark glazes that feature fig or balsamic. For vegetarian dishes, focus on hearty vegetables and starches, using seasonings and sauces that can stand up to a bold wine, like salty olive tapenade or tangy barbecue.
