Jean-Pierre Robinot L’Ange Vin Cuvée Bistrologie is a natural white wine from the Loire Valley, France, crafted exclusively from organically farmed Chenin Blanc grapes. The grapes undergo spontaneous fermentation in oak barrels using indigenous yeasts, a process that can extend from 2 to 4 years, allowing the wine to develop complexity and depth. The wine is aged sur lie (on the lees) for approximately 14 months in old oak barrels, enhancing its texture and flavor profile. Bottled without fining, filtration, or added sulfur, preserving its natural character.
