Clase Azul México Tequila Ahumado is a 80 proof (40% ABV) limited-release spirit produced at NOM 1595 in Jesús María, Jalisco. This expression bridges the technical gap between traditional tequila and mezcal production by utilizing underground pit ovens (pib) fueled by local holm oak for the agave cooking process, rather than standard masonry ovens. This 72-hour smoky roast of 100% Blue Weber agave is followed by extraction via a traditional tahona wheel and fermentation in wooden vats.
Double distillation in copper stills preserves the distinct olfactory profile of roasted agave, hickory smoke, and ginger. The unaged liquid focuses on the technical integration of highland agave sweetness with the phenolic complexity of wood-fire smoke. The bottle design features a dark green ceramic body with a wire-mesh cage and a lava rock stopper.
