This limited expression begins with the distillery’s signature high-corn mash bill of 88% corn and 12% malted barley, initially matured in new charred American white oak within the historic 1929 prison dormitory. To add complexity, the spirit undergoes a secondary maturation period in toasted French oak casks, which introduces a structured tannic backbone and delicate spice profile.
Bottled at cask strength, preserving the concentrated wood sugars and rich mouthfeel developed during the finishing process. The profile is characterized by a dense delivery of roasted nuts, espresso, and dried apricot that transitions into a long finish of toasted oak and ginger spice.
