Pinot Noir is a fussy grape. Too much sun and it bakes, shriveling berries before they’re ready to harvest. Not enough sun and fruit could not fully ripen, creating bitterness in the final product. Given the need for a perfect balance of cool temperatures for proper flavor development and just the right amount of sunshine for ripening, it is no surprise that California is an incredible place to grow Pinot Noir.
