Description
Il Baffone comes from third-generation winemakers Fausto and Cinzia Cellario, who farm 30 hectares across the southern Langhe in Piedmont’s Carrù village. This pet-nat blends Nascetta—a rare indigenous variety prized for its maceration potential—with aromatic Moscato Giallo, both grown on marl soils typical of the region. The grapes undergo five days of skin contact during primary fermentation in stainless steel, then are bottled with conserved passito must from the estate’s late-harvest grapes to trigger secondary fermentation. Following the ancestral method, the wine remains undisgorged and receives no sulfur additions, embodying the Cellarios’ commitment to natural winemaking.
