Description
Bichi’s El Prince is crafted from a blend of unidentified grape varieties, with some suggesting Dolcetto, Lambrusco, and Cariñena, sourced from the No Sapiens Vineyard in Baja California, Mexico. This dry-farmed vineyard, located near the Pacific Ocean at an elevation of 1,066 feet, features sandy loam and granite soils, contributing to the wine’s unique character. The grapes are hand-harvested and undergo spontaneous fermentation with native yeasts in concrete tinajas. Post-fermentation, the wine is aged for three months in a combination of stainless steel vats and older oak barrels. Bottling occurs without fining or filtration; only minimal sulfur is added, adhering to natural winemaking principles.
