Vinification and aging take place entirely in demi-muids without any additions, allowing indigenous yeasts to drive fermentation. Corentin Houillon Montée Furieuse ages on total lees to enhance texture and aromatics, bottled unfiltered without sulfur. This minimal intervention approach preserves the Jacquère’s natural alpine character while expressing the unique quartziferous terroir of this single steep hillside vineyard.
