The grapes come from 40- to 60-year-old vines farmed organically by trusted local growers. Whole-bunch fermentation and aging in concrete tanks preserve freshness and fruit purity. Hervé Villemade Bovin Rouge sees minimal extraction and is bottled without fining, filtration, or added sulfites—just a tiny dose of SO2 at bottling. 13% ABV.
