Marc Payan’s Les Vignes du Cheney Blanc is a natural white wine crafted from Altesse grapes grown in the Savoie Alps. As Jean-Yves Peron’s cellarmaster, Payan applies the same biodynamic philosophy and natural winemaking principles that define Peron’s approach. The vineyard sits on limestone and clay soils at high altitude where alpine conditions preserve natural acidity and concentrate flavors. Payan hand-harvests at optimal ripeness to capture Altesse’s distinctive character. Fermentation occurs spontaneously with wild yeasts in neutral vessels, followed by aging on fine lees. No filtration or sulfur additions maintain the wine’s authentic expression of Savoie terroir and Altesse’s renowned elegance.
