Old Stubborn Batch 2 106–125 Proof (53–62.5% ABV) is a highly allocated, straight wheated bourbon whiskey produced as an ultra-premium limited release by Rising Tide Spirits. This 2023 expression utilizes a rare pot still wheated mash bill consisting of 71% corn, 21% wheat, and 8% malted barley, representing legacy distillate from Smooth Ambler in West Virginia. Originally distilled on a hybrid pot still in 2012, the liquid matured for 11 years in new charred American oak within the Appalachian climate.
Master blender Ed Bley selected these specific barrels for their viscous texture and lack of grain-forward notes. This evolutionary process yields a rich and complex profile of butterscotch, dark honey, and stone fruits, balanced by a deep undercurrent of seasoned oak and vanilla bean with a long, velvety finish.
