Description
Hervé Souhaut Clos des Cessieux Syrah is a Saint-Joseph from Domaine Romaneaux-Destezet in the Northern Rhône. Made from 100% Syrah grapes from 30-year-old vines on a family parcel with helical-shaped slopes and granite soils, the vineyard faces northwest to full south. Hand-harvested grapes undergo whole-cluster fermentation at low temperatures in wooden tanks with indigenous yeasts, then age on fine lees in neutral Burgundy barrels for eight months. Bottled unfined and unfiltered with minimal sulfites at 12.5% alcohol.
