Description
Tsavouisse is a natural red wine produced by Lucas Madonia in the Valais region of Switzerland. Crafted from 100% Pinot Noir grapes sourced from organically farmed vineyards in Ayent, the vines are situated at elevations between 600 and 850 meters on steep, terraced slopes composed of schist and limestone soils. The grapes are hand-harvested and manually destemmed, followed by a maceration period of approximately 25 days. Fermentation occurs spontaneously with indigenous yeasts, and the wine is aged in old Burgundy barrels ranging from 228 to 600 liters. Bottled by gravity without fining, filtration, or added sulfites, Tsavouisse 2023 embodies a minimalist approach to winemaking.
