Description
Named for the hoopoe—a migratory bird that returns each spring to the Auvergne hillsides—Henri Chauvet Au Chant de la Huppe 2023 comes from a co-planted parcel of Gamay d’Auvergne and Gamay Beaujolais on red clay soils rich in iron oxide, decomposed granite, quartz, and limestone outcrops. Henri Chauvet whole-bunch macerates the grapes for seven days in large stainless steel tanks, drawing off some free-run juice early in fermentation to preserve brightness. The wine ages nine months in a mix of stainless steel and old 228-liter barrels, then rests nine more months in bottle. Only 1 g/HL sulfites added.
