Verdejo is a lesser-known but stunning white wine hailing almost exclusively from vineyards planted in central Spain. The regions where Verdejo is primarily grown are warm, sunny, and feature sites mostly covered in sandy soils. This kind of growing environment forces vines to work harder to find nutrients, which results in deeply concentrated flavor profiles. Grapes used specifically for this wine were harvested late at night to retain the natural acidity found in the varietal.
