This release represents a technical assembly of three distinct recipes: a 12-year-old OESO (20% rye, red fruit yeast), a 12-year-old OBSV (35% rye, delicate fruit yeast), and a 16-year-old OESK (20% rye, baking spice yeast).

Matured in specialized single-story rackhouses, this blend was engineered to showcase the rare “O” yeast strain’s ability to provide bright, jammy esters alongside mature wood tannins. The resulting chemical profile is defined by vibrant notes of red berries, dried apricot, and rich caramel, which integrate with the structural spice of the 16-year-old OESK components.
