WhistlePig The Boss Hog III ‘The Independent’ is a 120.1 Proof (60.1% ABV) rare and highly sought-after straight rye whiskey produced at the WhistlePig Farm in Shoreham, VT. This limited 2016 third edition marks the first Hogs release to be finished in experimental 250-liter Scotch Hogshead casks, which were specifically chosen for their intense wood interaction and previous seasoning with high-malt spirits.
Composed of 100% straight rye aged for 14 years, the spirit underwent a secondary maturation that integrated the robust, spicy character of aged rye with the delicate peat and heather undertones of the Scottish oak. The profile is characterized by a dense delivery of honeyed cereal, dried apricot, and light smoke that transitions into a long finish of toasted oak and savory baking spice.
