Description
In Italian, “cima” means “the summit,” and our Cima Cabernet Sauvignon was named with intention—the pinnacle of our wine portfolio. Each year, we select the absolute best barrels from our two Howell Mountain Estate Vineyards to craft our Cima Cabernet.
The 2021 Cima Cabernet Sauvignon bursts forward with black cherry and ripe plum, but is balanced by the subtle oak presence—a balanced blend of our Croquet and Cold Springs Vineyards. The flavor lingers long after the last drop, complemented by a touch of minerality and spice.
Hand-harvested in the cool morning hours, we take care to sort our fruit before and after the destemmer. After a three-day cold soak, we inoculate the juice with cultured yeast, then monitor temperature and extraction carefully during fermentation. The wine is pressed off the skins and placed in 100% new French oak barrels for aging.
