Delight your senses with our 2021 Cold Springs Vineyard Howell Mountain Cabernet Sauvignon. At first sip, you’ll find notes of bright red raspberry, sweet blackberry pie, and nostalgic blueberry preserves, opening into a play of flavors and textures that will leave you speechless. Creamy and rich, this highly concentrated vintage begs to be paired with lamb or mushroom risotto.
Hand-harvested in the cool morning hours, we take care to sort our fruit before and after the destemmer. After a three-day cold soak, we inoculate the juice with cultured yeast, then monitor temperature and extraction carefully during fermentation. The wine is pressed off the skins and placed in French oak barrels for aging.
