Description
Inside I’m a Boat Built of Paper is made with 100% Grenache from old vines planted in 1956 by Gérald and Jocelyne Oustric in Valvignères, Ardèche. Part of the grapes were destemmed while others underwent direct pressing, then macerated together for one month. The wine aged for two years on lees in used oak barrels. Anders Frederik Steen, former sommelier at Noma, ferments spontaneously outside under open sky, following his philosophy of “grapes and only grapes” with no additions, no filtration. The clay-limestone terroir of this Rhône Valley subregion provides ideal conditions for this natural winemaking approach.
