Description
Azimut Cava Brut Nature NV comes from Alt Penedès in Catalunya, Spain’s most renowned sparkling wine district. The Suriol family produces this traditional-method Cava using organically grown Macabeu (40%), Xarel-lo (30%), and Parellada (30%) from clay-limestone soils. After primary fermentation with indigenous yeasts in underground concrete tanks, the wine undergoes secondary bottle fermentation and ages a minimum of 10 months on the lees before disgorgement. With dosage under 2 grams per liter of residual sugar, Azimut Cava Brut Nature carries the “Brut Nature” designation—the driest category of Spanish sparkling wine.
