Description
Chardonnay, Merlot, Pinot Noir, and Seyval Blanc from organically farmed vineyards on Seneca Lake. The winemaking employs creative co-fermentation techniques: Chardonnay and Merlot macerate together as whole clusters for 10+ days, while later-picked Pinot Noir and Seyval Blanc undergo two weeks of maceration. After pressing, the components merge in a neutral 40-hectoliter oak foudre for fermentation and élevage. True to Barbichette’s philosophy, no added sulfites, yeasts, chemical additives, fining, or filtering before bottling.
