Description
Bichi’s Pet Mex is a natural pétillant-naturel (pét-nat) rosé hailing from Baja California, Mexico. The grapes are sourced from a single, dry-farmed, own-rooted vineyard planted in 2003, situated near the Pacific Ocean at 1,066 feet. The vineyard’s sandy loam and granite soils contribute to the wine’s mineral character. The specific grape variety remains unidentified, adding an element of intrigue. Hand-harvested grapes are destemmed and pressed after a few hours of skin contact. Fermentation occurs spontaneously with native yeasts in stainless steel tanks. The wine is bottled before fermentation completes, allowing it to undergo secondary fermentation in the bottle, following the ancestral method. No filtration or added sulfur dioxide is employed, adhering to Bichi’s minimal-intervention philosophy.
