Bichi’s Rosa is a natural rosé wine produced in Baja California, Mexico. The grapes are sourced from a 79-year-old, dry-farmed vineyard near the Pacific Ocean, cultivated without irrigation and grown as free-standing vines. The specific grape variety remains unidentified, adding an element of mystery to this wine. The winemaking process involves hand-harvesting the grapes and spontaneous fermentation with native yeasts. The wine is aged in stainless steel tanks to preserve its fresh and vibrant character. Bichi adheres to minimal intervention practices, avoiding fining and filtration and adding minimal sulfur dioxide only when necessary.
