Buffalo Trace Experimental Collection 30 Minute Infrared Light Wave Barrels is a Bourbon from Buffalo Trace Distillery in Frankfort, Kentucky. This 2016 release was distilled into four barrels constructed in 2009 with Independent Stave Company, where the inside of each barrel was treated for 30 minutes with both short wave and medium wave infrared light at 60 percent power before receiving a quick #1 char and being filled with Buffalo Trace’s Mash Recipe #1.
The Experimental Collection is Buffalo Trace’s long-running program of one-off whiskeys exploring unique mash bills, woods, barrel toasts, and aging conditions, with more than 2,000 experimental barrels aging in the distillery’s warehouses. The Infrared Light Wave Barrels release was one of two companion experiments released together in 2016, paired with a 15-minute treatment version, both developed with cooper partner Independent Stave Company to test how infrared toasting – what coopers nickname “sun on a stick” – affects wood extraction during aging.
On the nose, it shows oak and tannins mingled with dried fruit. The palate brings strong wood notes, dried fruit, and cracked black pepper, and the finish carries a lingering oak character with a hint of cracked black pepper.
The longer 30-minute infrared treatment drew out deeper wood character than its 15-minute sibling, producing a bourbon with more pronounced oak and pepper notes. It drinks well neat or over a single large cube.
