Crafted by Cantina Indigeno, this natural red is made from 100% organically farmed Montepulciano grapes grown near Montorio al Vomano, where clay-limestone soils and the interplay of Adriatic breezes and Apennine mountain air shape the fruit. The grapes undergo spontaneous fermentation with indigenous yeasts in open vats, with 18 days of skin contact before racking and pressing. Cantina Indigeno Casette Rosso 2021 then rests on its lees in fiberglass containers for eight months, bottled without filtration or fining.
