Description
Christian Binner Bombisch! Pinots Macérés 2022 is a skin-contact red-white co-maceration made from Pinot Gris and Pinot Noir grown on granite hillsides around Ammerschwihr in Alsace. Farmed organically and biodynamically using permaculture and regenerative practices, the grapes are hand-harvested and manually sorted before undergoing two weeks of whole-bunch co-maceration together. Christian Binner refers to this style as a vin “blouge,” a co-fermentation of white and red varieties. Christian Binner Bombisch!
