Clase Azul México San Luis Potosí is a 86 proof (43% ABV) Mezcal produced at NOM-D291G in Estación Ipiña, San Luis Potosí. This expression is crafted from 100% wild Salmiana agave (Agave salmiana), a variety native to the region’s semi-arid highlands at 6,500 feet elevation. The technical production involves steam-cooking agave in masonry ovens for 48 hours, followed by crushing via a Chilean mill and fermentation in proprietary tanks.
A unique simultaneous double-distillation in separate copper stills yields a profile defined by cooked agave, green chile, and wildflowers. The unaged Joven spirit emphasizes high-desert minerality and herbal complexity, housed in a red ceramic decanter honoring the Huachichil nomads.
