100% Gamay
This is a particularly old, Burgundy domain that dates back to the 10th century, more specifically to the time when Cluny Abbey was founded by the Duke of Aquitaine. Made with organic grapes from 60+ year-old vines. Semi-carbonic maceration, gentle pressing to extract the delicate flavors, and aging in used casks, then racked and placed in enamelled vats to mature. Finally, the wine was bottled without fining or filtration, with a dose of sulphur. Intense red fruit (cherry, raspberry) with earthy, mineral, and floral notes. It has a structured, balanced palate, often described with silky tannins, good tension. 14% ABV
