Winemaking After sorting and pressing, the juice is fermented at cool temperatures to preserve the purity of this pristine vintage. A kiss of French oak is followed by six months of aging “sur lie.” This complements the wine’s natural attributes by adding depth and roundness alongside its crisp acidity and bright fruit flavors. Vintage The Limestone Coast witnessed a stand-out year in the 2021 vintage. Relaxed, sunny days filled spring to autumn, allowing for a slow and even ripening, free from extreme weather. Early-season rainfall kept vines refreshed as a cool, dry summer encouraged Chardonnay grapes to develop splendid varietal character and crisp natural acidity. Harvest took place mid through late March, and it swiftly became evident this vintage would be cherished by casual consumers and devoted collectors alike.
Pairing Logic This Chardonnay’s fuller textures and lively acidity make it an ideal match for a variety of foods. Fried or roasted poultry with crispy skin drizzling in butter and oils will create a palate-cleaning effect as the wine’s bright acidity slices through. Seafood and salty dishes will emphasize its fuller body and fruit notes. Cooked vegetables are an excellent option, especially when caramelized or crusted with nutty cheeses like Parmesan or Manchego to complement the wine’s toasty aromas and flavors.
