Description
COS Frappato is crafted from 100% organically grown Frappato grapes in Sicily’s Vittoria appellation. Founded by Giusto Occhipinti, Giambattista Cilia, and Cirino Strano in 1980, COS practices biodynamic viticulture on red clay soils. The grapes are hand-harvested and destemmed before spontaneous fermentation with indigenous yeasts in concrete tanks. The wine undergoes nine months aging in concrete vats followed by three months in bottle before release.
