Description
COS Nero di Lupo Nero d’Avola is crafted from 100% Nero d’Avola grapes grown organically and biodynamically in Sicily’s Vittoria appellation. Founded by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano in 1980, COS cultivates old bush vines at 230 meters elevation on red limestone-laced soils. The wine undergoes native fermentation with indigenous yeasts in concrete amphoras and ages for nine months in concrete vats, followed by three months in bottle. This mineral-driven wine represents one of Sicily’s benchmark natural wine producers.
