The spirit was aged for a minimum of 13 years in new, charred American white oak barrels, a departure from the typical Canadian practice of using seasoned or multi-fill casks. This specific maturation process in the temperate climate of the Gimli warehouse results in a profile dominated by oak-driven vanillins and heavy spice, bridging the gap between smooth Canadian blending and robust American straight bourbon characteristics.
