Description
Domaine du Haut Bourg Le Pavillon is a distinguished Muscadet crafted from Melon de Bourgogne grapes, cultivated in the Côtes de Grandlieu appellation of the Loire Valley. The estate’s vineyards benefit from a unique microclimate influenced by Grandlieu Lake, the Loire River, and the Atlantic Ocean, promoting early grape maturity and preserving natural acidity. The terroir, composed of mica schist, granite, sand, and sedimentary rocks, imparts a distinctive minerality to the wine. Hand-harvested grapes are gently pressed, with the must settling for 48 hours at 13°C before fermentation in temperature-controlled stainless steel tanks. Aging on the lees (“Sur Lie”) enhances richness and depth, resulting in a smooth finish.
