Domaine Lucien Boillot et Fils is a singular Burgundy estate producing wines from both the Côte de Beaune and Côte de Nuits, with vineyards across hallowed villages including Volnay, Pommard, Gevrey-Chambertin, and ‘s holding in Gevrey’s Les Cherbaudes 1er Cru is just 0.40 ha of very old vines, planted in 1922 on a mix of clay and limestone , sittingright next to Chapelle-Chambertin Grand Cru .Pierre makes his wines in the Jayer style with cold soaking prior to an extended, native-yeast fermentation of 18 to 21 days on average, with grapes fully destemmed in most vintages . The result is a deeply terroir-expressive Pinot Noir of finesse, structure, and aging potential.
