Domaine Nøvice Merci Poulsard represents Yves Roy’s pure expression of this indigenous Jura variety from the renowned Trouillot Batard lieu-dit in Poligny. Sourced from 50+ year-old Poulsard vines planted on south and west-facing slopes at 250-300 meters elevation, this red wine undergoes complete destemming followed by three-week fermentation in fiberglass tanks using indigenous yeasts. The wine ages approximately one year in old barrels before bottling without sulfur, fining, or filtration. This organic and biodynamic approach allows the limestone-rich terroir to shine through, creating a wine that embodies the collaborative spirit and zero-intervention philosophy that defines the estate’s natural winemaking ethos.
