Domaine Nøvice One Shot represents Yves Roy’s skillful blending of Jura’s indigenous red varieties from his organic vineyards in Poligny. This red wine combines Poulsard and Trousseau grapes sourced from some of the estate’s oldest parcels, including 120-year-old vines rooted in limestone-rich soils. Following hand-harvesting, the wine undergoes spontaneous fermentation using native yeasts in tanks, with no additions whatsoever during the process. The wine ages for one year in a combination of vats and barrels before bottling without fining, filtration, or sulfur additions, embodying the estate’s zero-intervention philosophy that allows pure terroir expression through minimal human interference.
