This atypical approach transforms Jura’s cult red grape variety into an extraordinary white wine, showcasing innovative winemaking from the estate’s organic vineyards in Poligny. The fruit undergoes spontaneous fermentation using indigenous yeasts in tanks, followed by one year of aging in a combination of vats and barrels.
